5. Creamy Butternut Squash Soup
Groundbreaking, I know. But this version is so velvety smooth and flavorful, it’ll make you forget every mediocre butternut squash soup you’ve ever had.
- Ingredients:
- 1 medium butternut squash, peeled and cubed
- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable or chicken broth
- 21 tsp dried thyme
- Pinch of nutmeg
- Salt and pepper to taste
- 21 cup coconut milk or heavy cream (optional)
- Instructions:
